The inclusion of dried stems adds complexity and brings out the dark spice notes found in the wine. At the time of fruit processing, the berries are removed from the stems which are collected and dried in the sun. After the stems are completely dry, a portion is added back into the fermentation. In addition, tannins give this wine a rich structure and weight, without being overbearing, and a lingering, berry-centric finish.

VINIFICATION: Fermented on skins in bins for 21 days with 17% dried stem inclusion
AGING: Aged in 25% new French oak barrels for 18 months
PAIR WITH: BBQ ribs and steak, cured meats, chocolate-covered strawberries
